Homemade Blueberry Muffins

  • 2½ cups of all-purpose flour
  • 1 Tbsp baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 stick melted butter
  • 1 cup sugar
  • 2 large eggs
  • 1½ cup sour cream
  • 2 Tbsp milk
  • 1 teaspoon vanilla extract
  • 1½ cups fresh blueberries
  • Muffin Pan
Instructions
  1. Preheat your oven to 400°F with a rack in the middle. In a large mixing bowl, whisk together all of the dry ingredients, including the flour, baking soda, baking powder, and salt. Mix well.
  2. Place all of the blueberries in a bowl. Sprinkle 1 tablespoon of the flour over them and gently toss to coat coat them evenly. The flour helps keep the blueberries from sinking to the bottom as they cook.
  3. In another mixing bowl, mix all of your wet ingredients, including the sour cream, sugar, eggs, milk, melted butter, and vanilla. Whisk together until completely smooth.
  4. Add the wet ingredients into the flour mixture a little at a time while whisking, being sure the ingredients are completely blended together.
  5. Gently fold the blueberries into the mixture. Do not over mix! The blueberries tend to bleed and will turn your muffins blue if you aren't gentle.
  6. You can use a standard 12 capacity muffin pan. If you don't have or want to use muffin liners, simply grease the inside of the muffin pan with vegetable oil or butter. Be sure to distribute the mix equally into the cups. You'll have to fill them high to use all of the batter in 12 muffins, though they won't spill. Or you can just use another muffin tin to use up the rest of the batter.
  7. Bake in the oven for about 20 minutes at 400°F or until the muffins are a beautiful golden brown. Test with a toothpick to make sure the centers of the muffins are fully cooked.
  8. Be sure to let the muffins cool in the pan for 2 to 3 minutes, and then remove them. Cool for another 10 minutes before eating. Enjoy!
